What Fred said above... amps don't have volume controls, they have gain settings, attenuators, etc...
Wide open is my preference for max headroom, even though most likely, you won't ever use it all. Don't worry about having a limiter or not having one, learn how to run a system without "red lining" it. That's the correct way.
Don't ever ground lift ! Make sure your cables are all grounded properly, i.e. XLR. Whether they be TRS, or XLR... make sure you are NOT grounding audio loops to a chassis! Find the noise and eliminate it the right way. A great "primer" on this is the Rane 101 white paper... it's indespensible, and you'll use it forever.
Also, underpowering, or minimizing headroom can blow speakers just as fast, if not faster, than providing more headroom and juice. In fact, most horns are blown by underpowering and restricting headroom.
