For me, speaker placement comes down to the well known issue called the "precedence" effect. The precedence effect is how the mind determines the direction a sound is coming from and where one should focus their attention. Placing speakers in the back means the eyes and ears are in disagreement as to where to focus. This is not a good thing.
I typically use two speakers out front (usually to the sides so to be out of the shot). My mix position is usually in the rear so I can help space people walking up the aisle. Sometimes I will mix on the side though. There are times when I change my speaker layout due to prevailing wind conditions and/or noise sources (a lot of weddings here are outdoors).
