May a light month? Most schools are getting out in May so I dk how that's figured. Slowest times of the year are end of august and september when kids go back to school, as well as january/february. Thats when you really see an empty park. I guess we do things a little different. We don't go early. We went after noon and ate lunch at the hotel or off site and went to pool in the mornings. This way when we ate at the park it was quick things or snacks that you got from a cart or something. If we did eat at the park we had a reservation. Otherwise we ate dinner at disney springs. Rides... we had a balance of rides w minimal lines and some with an hour long lines but I think the biggest difference is we got there around 1-2 and stayed till late when it cooled making things more tolerable, meanwhile you were there in the hottest times of the day and never got a break. Magic kingdom you need 2 days, whereas epcot/hollywood/animal kingdom are 1 day parks. Last time we went we didnt even bother with animal kingdom.
Epcot is a BIG park. Lots of walking. I don't see how you can do everything there in one day. Especially if there is a concert you want to see that is going on. You certainly can't "eat around the world" in one day lol. Trying all the various food in each country there is a thing to do. Next time I do go to Disney, I would like to "eat around the world" in Epcot. The attractions there are old, but it's a beautiful park. Hollywood is the smallest. You Can definitely do that park in one day. Animal Kingdom, the problem is some of the attractions have way long wait lines like Avatar at least in 2018 the lines were 3-4 hours for that one attraction. I did not get to do that one.

According to the travel videos we watched before we picked May, all the videos said that MAY had the lowest number of attendees to Disney World.

I can see early September being low too since schools just started. I know two people who went to Disney in January a few years apart from each other, and both told me there were BIG CROWDS there, and lots of Europeans on vacation.

i think with us, since we stay till close and don't stop to eat, we have more time to work with (1-9/10pm). Keep in mind, when you go at rope drop (official public open), the park has already been open to those staying at disney property hotels for at least half an hour... so you're not really getting any benefits. They also get to stay 1hr after close. Epcot is easy only bc there are few rides w low wait times w/ exception of 2-3 rides. Food is almost all to go style.
